Stripping the protege interior

2000 Mazda Protege LX
Hey doods,

I really hate the interior colour of my 2000 protege LX, it's too grey and plain. I picked up 4 cans of duplicolor Fabric and Vinyl in flat black. I plan on painting (almost) everything black including the seats, carpet, door panels and dash.

This is pretty much the look Im going for.

I started the project today, but could not even get past the masking stage. I wanted to mask little things like the radio/AC console, speedometer, handles, buttons, ect. But the masking tape just wouldn't stick!
Would you guys just strip the interior and spray everything individually or leave it all together as mask with tape, cause Ive never taken anything like this apart, and it seems daunting to strip the whole interior. I have lots of painting experience, from guitars to bikes to computers, but this is just a whole other thing. I tried looking for guides or pictorials or videos that might help walk me through this but no luck. I wish I had someone that knew these cars inside out.
 
I did this to my tan interior. Take out as much as possible. The paint will chip off of anything that gets a lot of contact. So its not gonna work on some stuff. the only thing I would leave in and tape off is the dash.
 
For the bottom half of the pannels and most of the plastic stuff I had to redo with plastic paint
