Has anyone that's running a lighter rim/tire combo but slightly larger diameter tires noticed any difference in acceleration, i.e. better acceleration from start?
Yes, when you reduce the weight of the wheel/tire combo you can increase acceleration a bit as you are reducing rotational mass. Less mass means easy/quicker to turn the wheels. Also means easier to brake.
