OK, what is the best highway MPH should I drive to get the best gas mileage?

I'm trying to figure out the sweet spot between 65 and 75 for the best mileage. I will say that wind makes a material difference in mileage.

Sweet spot between 65 and 75 for the best MPG is 65. There you go, done.
 
Yes, 65 gets better MPG than 75, wind or no wind. That was easy enough.
 
If the Current MPG gage is at least somewhat accurate, than it seems that driving 40 MPH on level road, when pressing the pedal ever so slightly gets me north of ~40 MPG, sometimes even close to 50 MPG consistent readout (until I have to stop). Any slight downward movement of the pedal will immediately kill these excellent numbers. At this speed I believe the transmission is still in 5th gear (not sure).
Even at 25~30 MPH, I can get 30~35 MPG readout consistently, as long as I keep this very slight pedal position. At this speed, pressing a bit harder gets you immediately to 'horrible' territory.

The CX-5 has a dynamic compression ratio. At very low throttle and low load, the engine intake valves close late which leads to lower compression ratio, lower power and higher expansion ratio. When the throttle is depressed more, the CPU takes this as meaning you want more power so no more atkinson mode and no more hyper fuel efficiency at the expense of power.
 
I just did an 800 mile round trip. I locked the CC into 65MPH both ways with occasional stops and sprints (70MPH - 80MPH) to pass. I got 32 MPG on the way down and 33.8 MPG on the way back.
 
In the UK we get a gear indicator on the dash, in the manual at least, don't you have one. Also shows a arrow to suggest changing up or down.

I just got a 2014 manual... I don't think we have any gear indicators or shift suggestion indicators (or I might just be unobservant/blind). I'll look closer on my way home from work...

I have a 2014 Sport with manual 6 spd. trans. and it does not have gear or shift indicators.
 
A gear indicator in a standard seems redundant in a car, you put it where you wanted it, right? I had a BMW motorcycle that had a Gear indicator, I thought it was helpful, so I guess it would be in a car also. My Mother in Law has a 08 CX-7 auto, and it has a Gear indicator without having to switch it to Manual mode.
 
A good speed is around 112mph. You get to your destination quite quick so you must save on fuel!

 
I switch that off most of the time anyway. I was waiting for the mirrors to shake themselves off, but the shaking was about the same as at 60mph. It drives well at this speed, with plenty more to go. Not great for mpg though!
