Well you can go to Deep Ellum. That's a part of town just east of downtown Dallas. It is a 3-4 block radius with only clubs and tatoo parlors. No dress code at most of the palces and very casual atmosphere everywhere. Check out The Velvet Hookah down there for chill downtempo, Deep Ellum Blues for blues, The Pharmacy for great house on sat nights, and Trees, Gypsy Tee Room and Galaxy club for more of your rock/alternative bands. This part of town is usually best on Saturday nights after 10pm.

On the West side of Downtown the is a district called "The West End" There are some clubs here, but mostly resteraunts and shopping. This area has more of your big chain resteraunts (Fridays, Spagetti Wharehouse, Butcher Shop etc.) and sport bars. If the weather is good or there is a Maverick Game that night this area will get a large crowd.

You could also go to Lower Greenville Ave. To get there take 75 N/S to Mockingbird (about 5 min North of Downtown) and head east. Go 2 block to Greenville ave and turn Right (south). This is a street that runs through neighborhoods and has 3 sections with neighborhoods inbetween. The first section is mostly resteraunts Blue fish for sushi, Glorias for margaritas, Cabana room for Mojitos, kirby's for great (but very expensive) steaks, and the Granada Theater for live music. I live within walking distance of these places.
The next section has some resteraunts and some clubs. The best places here are Blue Goose for mexican, Hurcainne grill for seafood, and Mick's for a nice chill lounge/bar.
The last section is mostly clubs. With the close proximity to SMU it gets a large college crowd. Most of the bars/clubs here have a dress code (no sneaks, but jeans are ok) and cover charge. It's a good place to people watch and pick up tipsy college girls. Greenville ave is packed after 10 on Fridays.

For a more "Texas" experience you should go to Fort Worth. You can go to the Stockyards and have the best mexican food ever at JT Garcias. They only serve 2 dishes but there is ALWAYS a wait so get there early. Ther are also lots of steakhouses and bbq places in FW. Plus I think every weekend they still do the cattle drive through the main street.
If you like country music you should see who's playing at Billy Bobs. It gets big time country stars (like willy Nelson)

There is also a few places I like in Addison (about 25 minutes north of downtown).
One place is called Pete's deuling piano bar. It has two deuling pianos and the crowd sings along with either one based on wher eyou sit or your gender. It sounds lame, but it is REALLY a good time. There are ALWAYS HOT ASS CHICKS in Pete's, but it's a bit of an older crowd (25-35). It's located off Beltline just west of the North Dallas Tollway above the Improve. Drinks are expensive here though so be prepared, there's a $7 cover, and after 9:30pm it is standing room only so get there early if you want a table.
The other is Soho Jazz Cafe. it's more of a date place though. Small, quiet, with live jazz musicians, martini bar and moderatly priced meals. Nice for a little get away, but not the kind of place you hang with friends. It's on Beltline just East of the tollway.
