Plenty of factors. The main ones being maf voltage and the load in a gear.

I'm pretty sure we did not tap the MAF signal.
If I understand correctly, at WOT (or some max load level?) open loop is engaged and no tuning maps are in effect, just the ECU figuring out everything on its own.
