If the oven wasn't pre-heated yet, that means the air in the oven might not be up to 275 but the heating coils in an electric oven would be blazing hot. That's why they're bright red. The radiant heat can make objects inside the oven much hotter than 275. Air doesn't actually heat that easily compared to some things. I haven't looked at the how-to but it should say to pre-heat the oven.
It could still be the different ovens being different bit, too. Some are a LOT hotter than others and some just suck at keeping an even temp. I had to keep a cookie tray on the bottom rack of one oven I had because the coils stayed way hot even when the air temp did not get that high so I'd tend to burn the bottoms of things without that cookie tray.
