i'll be getting the Defi Blue Racer EGT and Oil Pressure gauges. I'll use the Blitz SBC i-Color for boost gauge/boost controller.

I've got one for you! However, it might be a bit on the small side and need an adapter plate....or several. But there will be no worries of breaking an engine. (glare)

well, i've decided on my turbo: GT25R. It's the same one as the MSP, but the MSP one is a GT2554; i'm going to try to get the GT2560. It has a slightly larger compressor wheel.
