idle issues, 98 LX

I have a 98 pro, with the 1.5, when i drive the car at 40 miles an hour and go to a stop and put the car in N at a stop light, my rpms drop to where the car is gonna die, then i pops back up to around 800 rpms, then drops again, and when i turn the steering wheel while idling in park, the idle jumps around on the rpms, I cant think of anything. i do have this:

both cats gutted, with o2 sims, ram air, timing is 2+ , and i run 93 octane, and every 5000 miles i run Sea Foam half in the intake, and 1/4 in the gas and 1/4 in the oil. it has 140,000 miles and i get around 22 miles a gallon,2 1/2 inch exhaust through out, 10,000 on split fire triple sparks, but about 40,000 on wires. about 67,000 on fuel filter and 40,000 on pcv valve. just changed oil.IAT was changed at 112000 miles. can someone help?
 
well i konw the rpms should kind of jump around at idle, because the power steering is working off the engine, thus when theres no load on the engine, the rpms kind of jump

feel free to correct me if im wrong. my car does the same thing, and i figured tahts what it was.
 
its like getting used to a mazda engine? hehe.

but, honestly. i understand the whole thing. my idles jerks sometimes when the A/C compressor is on. But, after it turns off. Idling goes perfect.

It is still weird how to solve my problem, but it might be somewhere related to electrical (sensors, etc) and timing (distributor or cam)?
