hacking GPS to type address while car is in motion... anyone know how?

Are you in the U.S.? I believe other countries don't have this restriction and can manually enter an address. The other possibility is that the firmware on the car has not been updated. This is a relatively new "feature" - I think maybe 10.815.

I thought the 2014 model did have active cruise control?

The SCB only works at speeds below 19mph, and as you say it does apply the brakes.

The only issue I see is weather the sensor, (fitted near the mirror on the screen), detects a object, that's not guaranteed.

Incorrect. SCBS actually stops the vehicle if you show no signs of breaking and there is an obstacle in front of you. It will cut the gas and apply the breaks.

Audi takes it a step further and uses it as a cruise control feature, instead of just a safety feature like Mazda does.

Funny thing is, CX-5 has all the sensors to do this kind of cruise control (Smart City Break Support + Lane Departure Warning System).

hacking GPS to type address while car is in motion... anyone know how? its quite annoying when the wifey is wanting to put in an address and i'm driving, and it won't let us.. only work around is just voice control, which is horrendous.

The safety lock is only for US vehicles?, so can you somehow set it up for uk english? - if it thinks it lives in Europe maybe the lock will not apply. of course the GPS will tell it where the car actually lives but perhaps you're just 'visiting' :)
