My favorites:

ALMOST anything Gundam, Cowboy Bebop, FLCL (as short as it is), Escaflowne, Vampire Hunter D (both movies), Love Hina, Initial D (only seen 2 episodes so far, but I DLed all the stuff from that thread last weekend), Ah My Goddess, Trigun, Nadesico...

There are more out there than you'll probably ever know & a whole lot that I've seen bits & pieces of. Usually, people tend to like a specific genre, but my tastes are fairly broad. If you are serious about getting into it, this is probably the best place to start: http://www.anipike.com/

EDIT: I've seen Eva (& the movie) & I think it's about as entertaining as the philosophical debate in Matrix Reloaded.

I can HIGHLY recommend a few, but it depends on what genre you like as I said. It's good to know other fans too because getting into anime can be more expensive than a drug addiction & friends usually own stuff that you can borrow or copy.

i highly suggest trigun and kenshin, tho if u watch kenshin, get the japanese with english subtitle, and the OVA's are excellent

Kenshin isn't bad & Trigun is a good mix of action & comedy. They are both good, but not the quality of anime that I would highly recommend.

im pretty open to anything.. so far ive liked things like Excel saga (funniest ive ever seen and my fav.), Vampirehunter D (both), Initial D (only seen though skyline), blood (its really gory), robotech(cuz its old school), Gundam (all), Akira (rereleased version), ghost in a shell, blue gender, X, baki the grappler (cool fight scenes), FLCL (cool mecha action), bubblegum crisis, ninja scroll, slayers, outlaw star, bastard and on and on......

I forgot Blue Gender, Ninja Scroll, & Venus Wars. Slayers & Outlaw Star were good at certain points.

Strangely enough, I actually really got into Reign when it was on. It comes off as a REALLY weird show at first, but once you get into it, it's cool.

Last thought before I go to sleep...DO NOT, I repeat, DO NOT EVAR watch Lain!

Fooly Cooly is funny as hell. I like other anime that is kinda "girlie" and kid like I guess, but still... Digimon and Sailor Moon have always been my favorites. I used to like the Gundam series, but I got confused after a while everytime a new series of it came out. I like almost anything on Cartoon Network. I'm not a big fan of anime gore or anything. I saw Akira and I wanted to puke. I like the cute ones with subtle sexual enuendos, sarcasim and side jokes. Teen Titans is hilarious too. (I've said that before about a million times). Inuyasha is good. But like everyone has said, there are about a MILLION different anime series and movies out there. It's hard to just pick a few. This is the japanese website for fooly cooly:

I HATED Anime untill I watched Cowboy Bepop (the series and the movie). Then I moved onto Initial D, with some Trigun, and Bersek. I still think Bebop is way better than anything else out there....and I still cannot stand DragonBall Z.
