Typical dealer genius at work! Most likely something is not connected. Now you get to hunt down the results of their less than impressive knowledge and skill set to fix it. Adjusting the boost pressure has nothing to do with it.
Check all of your connections at the throttlebody, intercooler and turbo. Then examine all of your vacuum hoses, WGA, BPV, Intake manifold, on the firewall etc. I think you get the idea. Go over everything until you find what's not connected.
Have you checked your plugs and or wires for the cause of the sputter? One broken exhaust manifold bolt should not be an issue as long as the others are nice and snug.
