sup man, I am in Alachua/Gainesville. I don't live out near Saint Augustine, but I visit it quite a lot. Anastasia State Park has catamarran, kyack, and canoe rentals, great rates, pretty cool. There is an IMAX theatre there. Columbia Restaurant on St George Street kicks ass, get their 1905 salad, unbelieveable. I am not sure where you can sign up for it, but there is parasailing along the beach, too.

But that s*** might be boring to you, not sure how old you are. Wait, I got it. If you like deap sea fishing, go check out Sea Love Charters. They were pretty cool a few years back wnen I went. Caught a big ass Baracuda, won the biggest fish contest that paid for the whole thing. My wife also caught a red snapper.
