My 2002 P5…Steering conversion question

I bought my P5 three months ago only to have the trans go out2 days after buying it. I've discovered broken parts and shady mechanic work in the process of getting it back on the road. It's undergoing a 5spd swap, tein s springs on tokico blues and a roof rack delete to name a few things. Looking for information about doing a manual rack and pinion conversion since my ps is leaking in a few places.. are there any manual racks that will bolt in and if so how do you delete the ps pump and keep the ac?
 
I don't know about a manual rack and pinion conversion, but I do know that some guys just deleted the power steering pump and drove it without power assisted steering.
They did have pretty heavy steering though.

I'm almost positive that all you need is a new shorter belt without having the PS pump. (I don't remember the size or part number though.)
