just use pure water. Water is for the detonation surpression, we put metanol for anti freeze purpose. Water is all we need, and its much more efficient than 50/50.
As for the AFR, rich AFR is for cooling purposeand faster flamefront speed. We tune for richier 11.5-12 because the extra fuel to cool the combustion chamber. But the water injection cools way better, mainly because water absorb heat more than fuel.
So when I tune with water injection, I aim for 12.5-13 AFR. More 12.5 because its the fastest flamefront speed. Anything less than 11.6 you lose power.
