Anyone here like Japanese food?

I am just wondering because i cook a lot, and i especially cook mostly chinese but some japanese dishes from scratch at least three times a week.

i have been to quite a few of those japanese restaurants called hibachi or teppan where they cook in front of you. most of those places have a super size ketchup type bottle where they shoot something during cookin which almost looks like soy sauce but it isnt...ive been trying to find out what it is now for so long its driving me crazy...

the last few places i went to didnt use that sauce...still good, but not using that sauce...

so i am hoping either someone here has the same interests or has asked about that sauce or soemthing.

or maybe one of the smart asses :) that makes fun of my google skills can find a japanese cooking forum or something (no luck from me so far for anything worthwhile :( )
 
no its thin like soy..ive been trying to call diff restaurants but they wont give the recepie or even main ingrediant

im going to scan this recepie from my book of recepies for you...but i changed the recepie a bit.

for one, i wouldnt use too much oyster, cut it down a bit cause it is really salty. also i added fresh broccoli.

here and there i changed a few things but this is a good start...

My mom is a sushi chef.

If the sauce was a bit twangy like vinegar then it is more than likely ponzu, which is home made.
You might be able to buy some at an oriental store...

well i normally used regular rice, but as of tonight im going to try to make my own fried rice in a wok...

i used 1 tbsp less oyster sauce and added some chilil sauce as well...let you know how it comes out.

Ham fried rice is the best. Seriously. Get a slice of ham, cut it into little squares and mixed it in. (drinks)
 
According to the wife, read Japanese born and raised, most of the sauses in Teppan resataurants are a mixture of other ones. The BullDog mixed with katsup if great for Tonkatsu, one of my favorites.
For rice I recommend getting true Japanese rice from Mitsuwa Market, should be one around you as they are all over the West Coast.

closest mitsuwa to matthew is in saratoga. totally not worth an hour's drive for a bag o' rice. just get nishiki from any safeway. or kokuho rose. either one is good.
