will sedan headlights fit a p5?

I have the opportunity to buy a member's set of Matt V retrofits, but he had them on a sedan, and I have a p5. Will they need any modification to fit?

no. they fit fine

Lovely. Will I need a different harness though? I know the sedan uses the same bulb for hi/lo beams, whereas the P5 has 2 bulbs.

You will need to modify the harness so you can run one bulb instead of two. There are a myriad of threads on this that should give you more information.
