Spark plug wires - just two that are serviceable?

03 P5 here, stock.

So I got 4 new spark plugs ready to go...

There is this whole plastic/wire assembly that sits on top of 2 spark plugs
The other two are easy to pull.

If I was to replace the spark plug wires, do I just do two of them???

Yes, there are just two wires. The other plugs have the ignition coil sitting right on top of them. If you're going to replace the wires I'd recommend changing the ignition coils too, if they go bad you risk damaging your primary catalytic converter. They're not very expensive, autozone has them for a little over $25 each.

NGK plugs and Advance Auto parts store brand coil/wires.

this is a stock car, investment is minimal.

FYI you can replace just the boots for the coils (although replacing the entire coil pack is a better idea!)
