When I set the parking brake on the 2016 with the electric switch, are just the rear brakes set? (traditional) Or are all four brakes applied?
 
Pretty sure all parking brakes are the rears only. If you look at a rear rotor, there is a small drum for the parking brake.

The Mazda CX-5 has disc brakes in the front and the rear. The parking brake operates the rear pads only. The rear of the CX-5 does not have rotors and drums.

No internal drums on this vehicle, but there are rear brake rotors. The rear calipers have an integrated system that pushes the caliper pistons in when the parking brake is applied. Looking at the rear calipers, you can spot an extra cable other than hydraulic brake hose on the inner part of the caliper.

Here's a pic of mine through a wheel spoke. The silver bracket holds the parking brake cable. This is on a '15, but it should be similar.
