It seems every decent rim out there is a 45 offset or below. After doing some research I assume that with the Cobb springs, 18x7.5s with a 45 offset, and 235/40's would rub. Is this a safe assumption

They may rub even without the springs. They did on mine under heavy load with stock suspension. But the good news is that you can have the rear fenders rolled and it takes care of the problem. It's about $100. I plan to go with the Cobb springs now as well.
