I have a 2019 CX-5. Is there a way to see the vehicle's GPS location history on the SIM card? I'm not talking about typed in addresses, but overall where the car has been driven and parked.

No, that data is not logged. The Nav card is a SD card and stores the maps, it does not record or transmit coordinates. Entered nav addresses are saved to the vehicle's local data.
However, the owners of 20+ MY CX-5s do have this data (along with acceleration, speed, braking, steering data, etc, etc) transmitted via the TCU (which was added to 20 MY vehicles) to Mazda HQ, unless they have specifically opted out via contacting Mazda! Some forum users vigorously defended this (LOL) when the topic was brought up here.
