ECM issue, engine light on

2006 Velocity Red Mazda 3i Touring
I've been lurking here since shortly after I bought my 2006 3i Touring. It has 120k+ miles on it now.
About 8 months ago, I got and Engine Light on which would cycle off every couple hundred miles; only to come back on 300-400 miles later.
I got the codes from Autozone (don't have them with me) but they indicated ETC sensor, thermostat, or other miscellaneous cooling system issue.

I replaced the ETC Sensor since it was least expensive and killed the CEL.
The CEL came back on about 200 miles later; only to stay on this time. I took it back to Autozone...same codes.
I figured it was about time to replace the engine coolant (YES, I know...117,000 miles is way too long to let that go and I'm getting it done next week...I was in nursing school and underemployed).
So, in March, it began to hesitate at RPMs between 2k and 3k (almost right at 2500 RPM). It will sometimes also hesitate at 3500 RPM.

I changed out the spark plugs which helped a little.
It runs better on higher octane gasoline.
If it is hot and dry outside, it runs (almost) perfectly.
If the humidity is high, it hesitates a little...the higher the humidity, the worse it hesitates.
If it is actually raining...hesitates very badly at 2500, 3500 and even 4500...but is at it's worst at 2500 RPM in the rain.
Autozone codes are still the same...ECT Sensor, Thermostat, or Cooling issues (suggestion was air in coolant system)

I'm about to get the coolant changed and CEL shut off...we'll see if that helps.
My vehicle inspection is 6 months overdue (of course).
I have also changed the gascap, just in case but no change.

Any suggestions are welcome. I just want to get it running in good condition so my wife can drive it...I think I may trade in her 2002 626 on a new CX-5 Touring (or a new 3i Touring HB) - leaning towards the CX-5 but I sure do miss my 2002 PR5!!
