The nurburgring can be a dangerous place. The people paying money to drive on it know that they are taking their lives into their own hands.
Truth is, Germans are MUCH better drivers than Americans. They KNOW slower traffic stays right and they KNOW that you are only supposed to pass on the left.
Btw, any corner you can do 140 around is more of a gentle sweeper and unless there is a blind dip (in which case you should be slowing down anyways), you should have plenty of time to react to them.
When you pay your money to run on the ring, you are responsible for yourself. No one holds a gun to your head and forces you to drive on it.
You check your mirrors, watch your speed, obey the laws of traffic, and have a heck of a good time.
Its no different than being at a track day...except this is the coolest public track EVER!!!!!!!!!!!
