Car can self tune?? help..?

As most know, and for those who dont...
I have a 2008 mazda 3i (2.0L)

I put a turbo kit on it and it isnt tuned correctly... It is set to hold at 5lb and it wouldnt go above 5lbs even if i pushed the pedal all the way down. and if i got up to 103(ish) my car would start fuel cutting.

The other day i got on the throttle to pass a car, accidently pushed the pedal down to far and it went up to 7lbs, also yesterday i raced an EVO i saw it hit 7lbs again and i was able to get up to 117(ish) before it started to fuel cut...

Does anyone why it would do this and if it is bad that it changed itself? i havent done anything to mess with it, i drive it the same as always and it just randomly changed..

Mine has seemed to kinda make random changes to itself. I took off the negative terminal a few times, and after I put it back on, the car would idle real low and almost cut out. Then it'd randomly fluctuate and eventually fixed itself. It may be tuning itself, but that just sounds weird haha.

Well I disconnected my battery before this happened and when I started my cat the next few times it would idle high almost spooling my turbo, but them eventually fixed then it did all this.
