Can't find OEM size aftermarket rims

Mazda brochures show OEM rim size for the Signature as 19x7, but Tire Rack only has rims as small (width) as 19x8. What gives? For weight & OEM driving dynamics I really wanted to stay OEM rim size. And I don't know how OEM tires made for a 7" width would fit on an 8".

Or, what do I gain or lose by going 19x8 - I know I'd have less tire extending out to help guard against curb rash.

Also, will an offset of 40 work (OEM I think is 45)?

7" wide rim is weird for this car, too narrow looking and doesn't allow you to run wider tires. I'd go with a 19x8 or any other 8" wide rim which will allow you to use the same tire, or slightly wider.

I sold the OEM rims and tires the same day I picked up the car. I went with a 18x8 rim and 225/60-18 winter tire, and will go with a 18x8 OEM Mazda rim and 245/55-18 summer tire.
 
A 19x8 will fit with no modification needed to the car? What does that do to the standard 225/55/19's that are now on stock 19x7's?
 
Yes, 19x8 ET45 will fit with no modification. The tires will look and function the same. 225mm = 8.86", so the tires are better suited to an 8" rim anyway.
