Apple CarPlay and Android Auto greyed out?

Is there any way to fix this? I’ve tried plugging in my phone to the usb port, connecting it with bluetooth and it stays grey.

Try another USB port. There should be an icon of some sort by the port that is for Car Play (might look like a phone). If that doesn't work try with a different cable.

Not in factory for North America builds. There is a Mazda part for wired AA/CP that can be installed, which replaces the USB hub in the armrest. In theory, one can use a wireless adapter/dongle with that part to get wireless AA/CP.
