how do you take those action shots?

You can buy or build a camera rig. I went and bought a glass handler. The device that people use to move pane glass windows. Bought a metal rod and a universal rig mount for the camera to attatch to. Put the rod into the handle of the glass suctioning device and affix the camera to the end of the rod. Set the exposure length to 3 seconds and roll the car. Voila, moving shots. Or just have a friend take shots while rolling next to you. <-- Typically involves a person shooting pics from passenger seat while another friend drives the chase car.

Sorry I went so in depth, but people sometimes do stupid things. lol
