Okay, I understand that "racing from a roll" tends to be more spontaneous and less conspicuous than launching from a traffic light or any other situation where two cars are stopped and staged against each other.
I also understand that starting from a roll negates the advantage an AWD or RWD drive car has at the launch.
As for the abuse of launching the car... sure, I can understand wanting to avoid that too. After all, we saw what happened to Hitler's GTR.
But if you're worried about abusing your car, than why "race" at all?
lightly modded, the ms3 is a high 13-sec car from a dig with a good launch. From a roll, the ms3 turns into a 12 second monster.

Well sure, the MS3 can do the quarter mile in 12 seconds if it starts with a 40mph rolling start.
With a 50mph rolling start, it probably does the quarter in less than 10 seconds!
Is there a "standard" for roll-on racing, such as what speed the run starts at?
To be honest, I really don't care about horsepower pissing matches and I think anybody can go fast in a straight line without any skill... especially from a roll.
Throw in some corners and that would show who can drive and who's just good at bolting on parts. (cool)
