2019 CX5 Touring. 17in wheels. I would like off road style tires like WildPeaks what other options are suggested and what sizes fit without spacers?

check out Toyo atIII as well I have had both Faleken Wildpeak and Toyo ATIII's and currently my daughter and her husband are running the Toyo ATIII's on their CRV and treat it like it is an offroad vehicle...

Stock is 17x7 +45.
You have plenty of room. Largest I have seen is 265/35/22 on a 9.5" wheel at +46, and 275/40/20 on a 9.5" wheel at +40.
In each case they probably had only 5-10 mm before rubbing on the front strut.
The most important spec for you to watch will be the tire section width. This changes based on the wheel you fit it on.
