OBD2 Scanner/App: what sensors/values to monitor?

Do any of you keep your OBD2 scanner on to monitor values not shown on the car's dashboard? I have a spare Android phone that is now doing that job. Besides coolant temp (194~214), ATF temp (188~208), battery/ECU voltage (14/13), there are many more sensors to choose from the app. I understand that not all of them are available for my specific car/connector. What are some other values that are useful to monitor and log? It's a 2017 CX-3 that didn't need extra attention until this year (after 153K+ miles). Thank you!

Which obd2 scanner/app combo you're using, I'm thinking to do the same for 16' mazda 3.

Temps and voltage are easy to monitor, most engine parameters are best data logged then reviewed afterward until you find a set of parameters to review live.
It gets cumbersome to review live engine parameters constantly.

I bought a Veepak BT dongle for the BimmerLink app when I was working on my R56 in July. Now that it doesn't start any more, I use the dongle on the CX-3 with the Car Scanner Pro app. I forgot what additional features I got for $5 extra. It's nice to have 6 values displayed on one page and I can have multiple pages.

It seems to depend on the vehicle. I usually look for the low teens for idle, mid-twenties to thirties cruising. Accelerating it will be in the 30's-50's. There are times when I have the pedal down a bit, maybe halfway, and the TPS jumps from the 50's to 91 on it's own, possibly for efficiency. I'm not sure if it ever goes over 91.

I'll give this obd2 a try, had an old one but its not working anymore.
