I'm thinking of my spinach salad with citrus vinaigrette (it has smoked almonds, red grapefruit & mandarin orange sections, asiago cheese - very yummy) and maybe corn on the cob. If I pre-cook the corn on the cob 'til it's just about done, do you have somewhere I can finish it off to heat it up? Grill, microwave, big pot on the stove?
