I own a 03 Mazda 6, and have been dealing with a windshield that loves to fog up. Are there any tricks out there that I can try?

If you have working AC, cycle it for to draw moisture laden air out of the interior of the car (. . . also refered to as demisting), set the cabin air selector to external, it should clear in a few minutes.
The car may also have some sort of leak, that is allowing accessive moisture to build up in the interior of the car. Check window seals, door seals and weather strip seals. This fogging may also occur during cooler winter months when snow is carried into the car and melts on the floor mats. (dunno)

Be sure you're not in recirculate mode (the pic button showing air circling around the inside of the car). You need to choose the other button to get fresh air in from outside the car.

There is a TSB for this. My wifes 05 6i had this problem. It is a safety issue and should be done if the car is out of warranty or not. IT CAN BE FIXED.

I had the same problem yesterday taking my son to school in the wifes 6, it finally cleared up 30 minutes later. Very aggrevating.
