And in that pic where she's standing on a rock; is that a rock on water or is that just different coloration of the rock down and to the right?

I was just thinking how cool that pic would look if it was at the edge of a little waterfall in a creek and the water was blurred by slow shutter

It was just a fallen tree in a park actually.
 
so i've attempted to understand the white balance thing haha. would it be better to manually set the white balance by using a photo or would using photo shop be better/ easier?

I assume the camera is set on auto?? If so it is not adjusting for the color of lighting you are shooting in. The best thing you can do is try and adjust it in the camera. I have never had any trouble with my d80 not getting the white balance right. You can try to pick the setting yourself by pressing the WB button on the back and scrolling through the icons on the top screen and pick the one that best suits the lighting.
 
this one was uploaded to photobucket so it looks kinda blurry but not bad (i think) for my first time with a DSLR and my first time taking pics of people.

Its a Nikon d40 with the kit lens (18-55)

i usually shoot on aperture or shutter priority. i'll try the WB button and see how they turn out. thanks!

Or shoot in RAW and change the WB later on in your RAW editor, Lightroom, etc...

oo, i have shot in raw before but it mostly just confused me. so after i shoot in raw, i can open it up in photo shop or something and just mess with the settings?

If you have a CS version of photoshop then it comes with a raw handler that allows for quick adjustments before you take it into the actual program. Lightroom handles raw as well.

I still recommend getting it right in the camera first. Less time post processing and less frustration.
