That's because big, knobby mud tires suck in the snow. They get packed with snow/ice and basically become slicks and because they're so wire the weight is distributed over a large area so friction is reduced. The best snow tires have deep grooves so they don't get packed with snow/ice and are narrow as hell so all the vehicle's weight gets applied to a small area.You'd be surprised how easily lifted trucks with huge tires get stuck in the snow!
