Question About T-stat and Heater

First of all, is this the right forum for a problem question?

I have a 2004 Mazda 3i 2.0 Liter. Recently I found out that my t-stat was stuck open and it needed to be replaced thanks to my trusty "Check Engine Light". So I bought a new one special ordered from Auto Zone. My stepdad put in in for me. Then he decided my air filter should be checked and cleaned if not replaced. So he took it all out, cleaned it and put it back together. So... now its been two days. First impression was that my temp needle danced A LOT. My Mazda has always been cold to middle of the gauge in 3 minutes flat if not less. Now it dances up and down. It never stays hot, just spikes and comes back down... Normally the faster I go the higher it gets, but never HOT... and it cools right down. Never ever seen that on the 7-10 cars I've driven in my life. Is that normal?

Second thing is that all of a sudden, my car won't blow hot air. Cold is cold and hot is cold. It also sounds like there is a fan running on high or something... Kind of like a vacuum cleaner when I am idling or driving. Can't figure this one out.

Please help if you can! I know little to nothing about cars.

I would definitely say my car needs some new anti-freeze because some leaked out when he was changing the t-stat.
