Here are some pics of the Hoosier R3S04s on my stock 14" wheels. The tires are a very wide 225/50 and the rim is only 5.5". This just goes to show you that it can be done. And no, the sidewalls aren't soft because of it. I'm 330lbs and I can stand on the sidewalls without moving them.

To answer your original questions. I would do it. Because in my class, H Stock, you are limited to original wheel size. I can't use a rim bigger than 5.5", so I just mount an oversize tire. The tires needed 50psi to work well, but I used them on Saturday, and other than the fact that I couldn't keep them hot enough, they worked well. At 50psi, the sidewall doesn't roll excessively, and being Hoosiers they have extremely stiff sidewalls to being with.
The shadow makes it very hard to tell if it is a 5.5 or a 6.5 from the picture.
I think the 205 is a better size than the 225 on that size rim but I run a miata with the size rim size so that might make a bit of a difference.

The issue with the Rs, is that I'm using them for autocross, and I can't seem to get them hot enough to work up to standard. I'm running 50 psi, and the sidewalls are rolling the perfect amount.

I have to agree on the 205 vs 225 comment. I've been using 225's on my 5.5" Miata wheels for roughly a year. After a bit of comparison, the contact patch isn't much larger than that of a 205 on the same width wheel.
Due to the amount of deflection the sidewall makes to fit the wheel, the shoulders are thusly pulled in and away from the road surface.
Josh, why don't you run an A instead of an R? I like to run R's during the Summer (it is Atlanta afterall), and A's in the spring/fall. Even for a single driver, the surface temps are way to hot for A's here and R's seems to work just right.

Also I think the wider tire will take more time to heat up.
R's last a lot longer than A's.
I am currently using Kumho V710's after 130+ runs on my A3S03 hoosiers(not corded just not working so well anymore) The V710's are not as wide as the hoosiers in the same size (205/55/14)

Kevin, a guy on the GRM site was selling his Rs. Since I didn't have any R-Compounds yet, I snatched them up. I'm definitely going to go with some 205 As next year.
Mike, if you, Simon and I are all doing runs on those tires, I'm pretty sure they'll get nice and hot throughout the day.
I'm still getting used to the massive slip angles you can drive with, with these tires. It'll take me another couple events to learn to drive on them properly anyway.
