Blown head gasket at 63K miles?!!!! Advice needed!

I have a 2007 Hatch with the 2.3 engine. Driving up the hill near my place, I heard a pop sound, felt a loss of power, looked in my rear view to make sure noone was close and saw tons of white smoke. Being about 1 block from home I turned around and parked it. Definitely white smoke from the exhaust, doesn't smell like burnt oil, but very little fluid loss if any yet and no water in the oil. Oil levels looked normal. No check engine light and the car had not been getting hot. Here's the worst thing, its my wife's everyday driver, we've babied it, and it's 3K miles past the powertrain warranty! Anyone have experience asking Mazda to extend a warranty? From my perspective, this sort of failure should never happen with so few miles. Any advice would be helpful!

The dealership tells me it's not the head gasket. Instead they say that there was too much oil in the engine and that caused the engine to smoke.

To be sure the head gasket was not damaged, I asked them to perform a compression test and to pressure test the coolant and oil systems. Apparently all three checked out ok.

Now though theres a new complication. After getting the car home I checked the oil and it appears to be one or two quarts low.

Im assuming the dealership did fill it properly; so, the question is what might cause it to read incorrectly?
