A/C is auto on? How to override?

hey guys i have an issue with my AC actually when the AC compressor engages and my RPMs intead of going up a little they dropp down a lot sometimes i think the car is about to shut off. the problem starts after some hours driving it. Any idea about this problem?
Any help will be appreciated
