Just finished creating a dash mount for my Nexus 7. It took me four tries to get it right. It's not perfect, it can use a little better sanding but I just wanted to get it done so I can stop staring at the large hole in my dash where my stereo is supposed to be. When I first bought my car last year I installed a Pioneer AVH-P6300BT with the Scosche MA1548B kit. I ended up selling the Pioneer and bought a JVC KDX50BT and installed it in my glove box. I'll probably make a new mount again soon to perfect it but I am extremely happy with how it turned out not having done any custom work like this before.

I'm in the market for a Mazda5 myself and literally just started looking around in the last 48 hours... I want a double-din after market radio/GPS solution and this is HOT. Considering I own an iPad Mini and Nexus 7 right now, I might have to explore this idea more :)

That looks nice! Fills in the dash and I LOVE the flush look. Just watch out for Moore’s law b/c in a few months there will be a newer/better gadget that won’t fit but you can just keep making new mounts. Would love to see how you mounted the HU in the glovebox. Have you thought about just adding an external amp and eliminating the HU? Supposedly DVD and media, in general, is dying anyway so you are way ahead of the curve using flash and wifi content.

There are some Andriod based double DIN HUs that are really interesting b/c it is fully upgradeable and customizable.

EDIT: Since you already have the tablet fixed, you must get the Torque app for giggles http://torque-bhp.com/. I don't follow Android but since it is more open sourced, you may be able to get away using a cheap/generaic Wifi/BT ODB2 interface too.
