how about a rx-3 or rx-4. and drop a 20b into it. You get to mess with rotary engines + have the classic muscle car style look that your dad likes. However it would be harder to find the body i think. with whatever you do. good luck 
not complete original but still sick and you they would probably be kits for the engine conversion.
