Rim width with Bilsten PSS suspension

So a ran the car with it's Bilstein PSS suspension at an SCCA event this weekend and it very obvious that the stock yokohamas are not up to the task of competing in STF. I'm wondering how wide I can go with wheels before I'm going to have rubbing issues with my Bilsteins. I figure 205/50R15 on 15x6.5 wheels should be no problem, but can I step up to 225/45R15 on 15x7.5 without rubbing? Or more to the point am I going to get a car that's no fun to daily if I go with the larger wheels and tires? I don't want to chase the 225s only to get a car that's really obnoxious on the highway.

Separate question, what offsets should I run for a 15x6.5 and 15x7.5 wheels?
 
15x7.5 and 195/50 or 205/50 is what you should be looking at. +32 to +42 offset should work. I certainly would not go with a wheel under 7" wide, and 225 (for best performance) should be on an 8-9" wide wheel.
