Overheating but not Mazda 2001 Tribute

So I have a 2001 Mazda Tribute it has 141000km on the clock. The problem I have is it keeps saying it is over heating but it isn't all engine tests show it is not hot. So far what I have had done is
Replaced the air conditioning compressor as it died thought that when it was replaced it would fix the problem but no.
Then we replaced the Thermostat
Had the cooling system flushed with radiator flush
We have also had the Engine coolant temperature sensor replaced but it still says it is over heating.
Each time the mechanic works on it he says he test drives it and lets it idle for 20 min and it doesn't happen yet I drive 15min and it's happening again.
The coolant level and oil levels are all normal. I regularly check all fluid levels in my car. There doesn't appear to be any leaks anywhere.
I am really concerned as I have an 800km drive to do to visit family with my children for Christmas and this problem still has not been resolved.
At the moment it isn't overheating just saying it is but if it does I'm not going to know.
Any one have any ideas as to what it could be this mechanics bill is really starting to add up and I really can't afford to just keep replacing things and the problem still be there.
It's so frustrating. Any help would be much appreciated.

did you bleed the air out of the system? do you have an odb connector? then you can scan the actual temperature vs what the dash is saying
