Need Help obd2 data logger/in car camera system

I know this might or might not be a little off topic but you see today i got pulled over note I just got my car this is my 2nd week I still dont have plates. Just temp tag.

Anyway the cop claims I was doing 57 in a 40 zone no way in hell I was doing 57 which is exactly what my answer was to him one thing with me is if I am wrong then well I am wrong no disputing that. I was doing the speed limit because I looked down on the speedometer and was just a hair under the 40 mark. Anyway he began writing up the summons I pulled out my paperwork showing I attended police academy but not a cop because I was injured. I asked him when the unit was calibrated the story changed and he let me go. But reminding me that I was speeding when I replied again I was not and went on my business.

so here goes I am seeking a cheap affordable way to accomplish 2 things on my car in car video surveillance preferably in a linux environment. MINI ATX or some sort pc.
and I want something that is always constant plugged into the obd2 port monitoring real time vehicle data time and date speed, braking, etc..

I always wanted this since some folks tend to abuse authority just to be a**Holes for the day.

You could also buy an stand-alone navigation unit... those also monitor speed and some other stats in real-time, but it won't be plugged into your OBD2 port.
 
DUMB QUESTION: Will a unit like that be able to display a time range where it can accurately synchronize a span of time with the speed of the vehicle...? Also - even if a product CAN display "The speed you were traveling at a certain time"... is it able to be manipulated? Calibrated? Would a court dismiss data provided by a defendant based on a consumer product?

Just curious.
