I keep reading bout rims and I just get more confused. HELP please!!!

40's seem to be your best bet.
at +42 offset, they will be 8mm further from the hub, meaning 8mm closer to your fenders.
you might have to roll your fenders to keep them from rubbing, depending on the drop the springs give you.
 
When running 17's and low pro's on P5 you'll want to stick with 215/40/17 tires, however with this you will need a +45mm offset or higher. The wheels you have chosen will for surely rub, and will require you to roll the fenders. Check with the wheel manufacture, they may have the same wheels in a greater offset. so what would be the max offset you could run?

Im running 225-45-17's on the rear with an offset of +47 at stock height. with rolled fenders I still get the occasional bump when my wife is sitting in the pack seat (she weighs 95lbs, tops). with a 215-45-17 on the rear it never hit.
but at 5mm further from the hub as those rims will be, with any drop your probably going to hit from time to time, depending on the roads and how many passengers.
