1800 PSI fuel pump

I installed a hi-flow catalytic converter last day and I logs a 3rd gear WOT
All are ok but I have 1800 PSI of fuel pressure at 5000 rpm. It's safe? My last logs before my upgrade is 1600 psi at 5000 rpm.

and when I release the gaz pedal after a WOT and use the compression I see the psi fuel pump stay hate 1200 and decrease gradually it's normal?
 
OP, more pressure likely means more volume, so be happy to see higher pressure. This car can have 2000+ at WOT and be very happy, thats the nature of DI. Worry about low pressures. Idle should be around 400-450 but it fluctuates alot so it will never be exact.
 
When I go WOT I see my pressures drop down to three didgets but then quickly return to the normal range. Is this normal since the fuel pump needs a brief moment to catch up or am I seeing fuel cut?

It is also very cold here so I am not sure if the temps are also to blame.

Do you see it at the same engine speed every time it happens?
 
When you mash the gas your FP should never go down then up. That's a FP that is not responding quick enough. If you have an 07 you might fall under the TSB where the FP Solenoid does not respond quick enough and you can get a new pump. If not, then you need to start thinking about internals or a new aftermarket FP.
