Doubt what ?
A few weeks ago I bought a 2019 Soul Red AWD CX-5 GT. Including a $750 Mazda loyalty discount, I wrote a check for $30,700.
The dealer had 2 Soul Red GT's (for the same price); the AWD (which I bought) and another with PP.
If the dealers in your area all charge $2,500 or so higher...
How many Mazda dealers are there within an hours drive of you ?
Here in the SF Bay Area there are lots of Mazda dealers so negotiating a price is relatively easy. For around here, at least, the OTD price you are getting quoted seems about $2,500 too high. If your area has multiple dealerships...
I did not look at features of the Premium Package (other than digital read out appearing on the front windshield, which I did not care for).
The $31,000 out the door price I suggested is for a CX-5 Grand Touring AWD. I believe the AWD feature is about the same upcharge as the PP feature.
I recently sold a Soul Red 2016 CX-5 FWD and purchased a Soul Red 2019 AWD . These cars have plenty of power so I've never even considered a turbo version.
My recommendation is to buy an AWD CX-5, $31,000 out the door price, whichever color your wife likes best.
Much of the new "electronics" are safety features. For example, I recently shopped for a Miata (to be driven by wife and son), and the 2019 models included items such as rear view camera, lane departure warning, blind sport monitoring etc...
Driving a Miata is great fun.
For a compact SUV, I test drove several brands/models including Honda CRV, Nissan Rogue, Kia Sportage, Rav 4, Jeep etc... and most enjoyed the drive of the CX-5.

Paint protection film (PPF) seems to be a popular aftermarket product.
I am curious if car manufacturers will begin producing cars with some sort of paint protection (layer of synthetic material) applied at the factory. It might be a feature that could help sell a particular brand's cars/models.
My family has both a 2016 CX-5 and 2019 CX-5. In some ways the 16's ride/drive is better. Up here in Nor Cal are selling 2016's and 17's with 40,000 or more miles for less than you paid, so it seems to me you got a very good deal.
For accessories, I highly recommend the CX-5 soft cargo liner ...
My experience (driving CX-5's) is that a tire pressure change from 37 to 40 is very noticeable. I have nolt tried it, but my guess is that on a CX-5 the tires inflated to 45 PSI would make the car ride "feel" extremely hard, like driving with wheels made of wood.

Well $29.5 out the door is about $700 less than the lowest price I was able to find/negotiate (after talking with and, or, visiting 5 SF Bay Area dealerships), so I think you got a great deal.
Here in the SF Bay Area I expect service all service providing companies and individuals to provide weak, substandard service. Whether that be a restaurant, clothing store, bank, or car dealer, if one goes in expecting the worst he/she is not disappointed if service proves to be decent or better.
I have owned 3 CX-5's and on these vehicles run stock Toyo's, as well as aftermarket Geolanders and BF Goodrich tires. My observation and experience is that the CX-5 is a compact SUV, not a sports car. As such I have not noticed any significant "performance difference" from one tire brand/model...
If the warranty covers paint then the warranty should cover your issue. Also, I think you are right to "push for a hood replacement" because I doubt an aftermarket paint job of your existing hood will match the rest of your CX-5.
