If your rough cold start is a newer issue and the PCM has not changed then it is unlikely that an update will correct it. More likely that a sensor is not registering the temp properly...
They are putting an expire date on a lot of things now so people will throw them away and replace them. Actually, I think I may be passed my expire date...

The dealer may have purchased it on line and sold it to you, was it on the window sticker? Also possible the update program has not been updated, has anyone been successful updating with the new 2021 cards?
I found a video showing how to change the fob battery in my 2020 and took it one step further to reach the plastic spindle on the back of the tailgate open fob button and cut it off. Problem solved, I never used the fob to open the tailgate anyway.
I had a 2013 and a 2016. To me my 2020 (all GTs) is lighter in steering that the other two. I thought it might have to do with lane departure having "room" to shake the wheel? Do you have lane departure turned on?
Prior to the trip if you have been taking a lot of short trips in winter, you may have had some gas/moisture in the oil that evaprorated or burned off during the long trip with the engine hot, thus reducing the volume.
