Just my two cents: Had my '17 over two years with no mechanical problems at all. Engine, suspension, electronics all work perfectly.
My only gremlin was a creak in cold weather and the occasional rattle inside. Solved by turning up the radio. :)
I'm from Central NJ as well - don't feel too bad about your deal you did well. Dealers are brutal in our area and don't discount much like our VA or CA cousins.
Only a ~5.8% dealer discount? IMO: No way - pass so hard. Even in NJ / NY (Which is pretty stingy with dealer discount) you get about ~6.8% walking in the door.
With the advent of the 2020s arriving shortly (like a month or two) you can most likely get the same deal with the newer model year...
On my 2016.5 I have the P7 Plus for about 15k miles now.
All in all, I don't have any complaints. I can't think of any problems with them in rain or snow. Road noise / ride seems to normal and life expectancy should be as advertised.

My 2017 had the infamous "bubble" in the center. It was a single large bubble due to lack of support in the padding thus stretching the leather.
I wonder if the padding underneath is irregular (For example there are hard bits in the foam) and therefore translating to the leather.

For the 2020's the NAV and traffic sign recognition will only be standard in the Signature trim. It is my opinion that Mazda did this to help "add value" to the Signature price tag.
And yes, you can still add NAV and TSR by adding the SD card to other trims for 2020.

I have a remote start, I find I can live with out it. It occasionally turns on the front defrosters but I have to manually turn on the back defrosters.
Plus letting the car idle with a remote start really doesn't warm up the interior that much.
Only a couple of minutes for me. I go out to start the car and turn on the defrosters, then a minute or two later I drive off.
