Correct, all brake lights are illuminated when the brakes are applied during adaptive cruise. With this in mind the signal to the lights is probably controlled by the ECU and activates when the ABS pumps are energized when braking.

Your dash light setting is on max. Turn the knob one click counter clockwise and it should switch to night mode automatically.

You can lock the doors with the engine running by pressing the lock button on your key fob. I've been doing it on my 2019, but I also have a Fortin so maybe that's why.

Should be automatic. I can think of two things: your dash light setting is all the way to the minimum (the opposite happens when it's at max, the map stays on day mode), or there might be a setting that allows for auto switching that you have disabled.

I don't think you will blow any fuses IF you grounded the multimeter to an outside ground. Just poke the pins with the positive lead.
