'Panel pins' or 'Panel clips'. There are a host of different sizes and diameters used in cars. Unfortunately, those look to be non-standard and you may have to go the dealer to get exact replacements, but you could try the 'Help' isle of your local parts store (AutoZone, etc).

If you can get the old sensor out undamaged, then you don't need it. If you break the old sensor though, you'll need it :). As I said, mine came out fairly easily, but YMMV.
Hah! I found the opposite. Sensors came out without too much trouble. Hubs were rusted tight.
I ended up using a mallet and a wood chisel to try to insert and pry all around the hub. It came out eventually, but I broke the chisel end :(
That's only for "high drain" situations, but our remotes are not high drain. In any case, 3-4 is 50%(ish) more than 2-3. My regular battery lasts a couple of years (or more)! Given a 50% increase, that would add an extra year (or more) of use. So definitely worth it.
If the car is older (as is yours), the hubs tend to rust on to the carrier and can be an absolute BEAR to remove (ask me how I know). If you are not a proficient mechanic, you might just want to have an indy mech do it.

My CX-50 has a touch sensor area inside the door handle for unlock, and a smaller one on the outside for lock. I imagine the next CX-5 refresh will do the same.
I've used both Meguires and Mothers plastic polishes on clear plastics and they work extremely well. In fact, it's more difficult to get a fine finish on black plastic than on clear. So, if it works well on black, it'll work well on clear too.
No protector. Try Meguire's Plastx plastic polish (or similar). Use only a microfiber cloth meant for eyeglasses.

You can change the (projector) low beams to LED or HID bulbs, but not the high beams/DRLs. DRLs work on a lower voltage to get dimmer lights, so it's not enough to light LED/HID setups (and even if it was, that would mean you have high intensity lights on all the time for your DRLs - BAD).
